Fudge Birthday Cake

Cake

  • 2 c. sugar
  • 2 c. flour
  • 2 tbsp. corn starch
  • 3/4 c. dark cocoa
  • 2 tsp. baking powder
  • 2 tsp. espresso powder
  • ½ tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. vanilla
  • 4 large eggs
  • 3/4 c. veg. oil
  • 1 1/4 c. water

Filling

  • 12 oz. semisweet chocolate
  • 6 oz. heavy cream
  • flavors of your choice

Icing

  • 8 oz. semisweet chocolate
  • 4 oz. heavy cream

Preheat the oven to 350º. Prepare your pans. **note your pans need to be at least 2″ tall **

Whisk together the dry ingredients. Add the eggs, oil and vanilla. Beat till smooth. Gradually add water, beating till smooth. Pour into prepared pans and bake for 35-38 minutes. Cool in pans 15 minutes. Turn out onto cooling rack and cool completely. When cooled completely, slice cakes in half.

To make filling, combine chocolate and cream in microwave save bowl, and heat till cream is hot and chocolate is soft. For me it took about a minute, stir another minute and stir till chocolate is completely melted.

Now you have a choice. You can flavor the filling all one flavor, using 3 tablespoons of your favorite liqueur or bottled extract. Or you can divide it into 3 parts and flavor each one separately using 1 tablespoon flavor per.

Put one layer of cake on your cake plate and spread with filling, add your second layer, and second filling till you have all your layers on your cake plate.

Make your icing the same way you did your filling, only using a bit less time, since you have a bit less cream and chocolate. Pour and spread icing over the top layer, allowing it to drip over the edges and down the sides. Allow cake to rest, covered with a cake cover (or a big turned-over bowl) till the chocolate is set; overnight is good. This cake does not need refrigerated.

  1. The cake turned out great. I made it this weekend. Only, I don’t know how to cut it in half so, I kinda omitted that part. It was gone in like 3.2 seconds. I really liked making it and eating it. lol Thanks!!!
