This soup is a throw-together soup. Depending on what you have on hand. I make a big batch, but it can be halved.
Cheesy Potato Soup
- 2 sticks butter
- 1 c. flour
- 8 c. milk
- 1/2-1 onion chopped
- 1-2 pounds Velveeta, cubed
- 6-8 potatoes, cubed and cooked~I really like to use baked potatoes
- 1 c. frozen peas
- 1-2 c. cooked cubed ham
Saute onion in butter. Whisk in flour and cook about 2 minutes. Add milk, stirring till thickened. Add cheese, stirring till melted. Add rest of ingredients. Heat through another 5-10 minutes. Adding salt and pepper to taste.
This is better eaten the next day.
