Cheesy Chicken Chowder

  • 8 Tbsp. sweet butter
  • 2 cups carrots, shredded
  • 1/2 cup onions, chopped
  • 1/2 cup all-purpose flour
  • 3 cups chicken broth
  • 4 cups milk
  • 2 cups diced cooked chicken
  • 1 cup fresh or frozen corn
  • 1 tsp. worcestershire sauce
  • 6 oz cheddar cheese, shredded
  • 1 tsp. salt
  • 1/2 tsp. pepper

  • Melt butter in your soup pot.  Add carrots and onion to sautee for about 1 minute.  Add flour and whisk, cooking for a good 3 minutes.  Add liquids and stir till thick.  Add corn, chicken and cheese.  Cook till cheese is melted.
